Hugh Fearnley-Whittingstall was my first real-food inspiration. I religiously watched his TV show, River Cottage, in all its various forms when I lived in the UK. His respectful approach to animal husbandry and his beautiful vegetable gardens were only a small part of what attracted me to River Cottage. Hugh makes use of his entire environment (which, lucky for him is the beautiful and varied Dorset coast), and embraces the rarest of his forages with what can only be described as glee.
But fear not! You don’t need rare ingredients to enjoy his down-to-earth recipes. He is a big proponent of cheaper cuts with fuller flavor, in-season goodies and introducing people to truly delicious, responsible eating. His cookbooks are must-haves.
Nora Gedgaudas, CNS, CNT, author of Primal Body, Primal Mind, is a leading paleo lifestyle and traditional nutrition expert. Her clearly detailed, exhaustively researched book is a must read for anyone interested in fully understanding how our bodies have evolved to work and the intricate processes involved in properly synthesizing various nutrients, from fats and protein to vitamins and minerals. Nora leaves no nutritional rock unturned, and both her book and website provide a comprehensive step-by-step guide to getting back to basics, or discovering those basics in the first place. Personally, this book has had an incredibly positive influence on my own health and I wholeheartedly recommend it.
Dr. Catherine Shanahan is a physician in Napa Valley, CA who has written two interesting books, Deep Nutrition and Food Rules, that detail the connection between nutrition and physical well-being. Though it seems intuitive that the food we eat has direct repercussions on our bodies in various, specific ways, the populace as a whole has moved away from the nutritional traditions of our ancestors and into a faux-nutritional, glitzy-packaged, strange, new world where chemically unstable vegetable oils and toxic, addictive sugars rule. Dr. Cate’s mission is to change how we view food and its effects not only on our health, but on our genetic code.
What can you say about Jamie? He’s the man. I love Jamie’s simple approach to food and his quest to demystify fantastic cooking techniques. Jamie’s Naked Chef was the very first cookbook I owned and it changed my life. I applaud his ingenious entrepreneurial spirit and can say with absolute certainty that every Jamie recipe I have tried I have loved.
