Hugh Fearnley-Whittingstall was my first real-food inspiration. I religiously watched his TV show, River Cottage, in all its various forms when I lived in the UK. His respectful approach to animal husbandry and his beautiful vegetable gardens were only a small part of what attracted me to River Cottage. Hugh makes use of his entire environment (which, lucky for him is the beautiful and varied Dorset coast), and embraces the rarest of his forages with what can only be described as glee.
But fear not! You don’t need rare ingredients to enjoy his down-to-earth recipes. He is a big proponent of cheaper cuts with fuller flavor, in-season goodies and introducing people to truly delicious, responsible eating. His cookbooks are must-haves.
